Three Cheese Crumpets
I finally got round to trying home-made crumpets this week... And these three cheese ones were a real success! Not overly simple to make but once I'd got the hang of getting the perfect pan temperature (medium heat recommended!), they came out beautifully. Go for strong flavours for these - they can take it. I used extra mature cheddar, mature red Leicester and full fat cream cheese.
I used the recipe from Olive Magazine (Google it!).
