Ice, Ice Baby!

Homemade ice lollies are such a brilliant way to use up extra fruit, especially during these warmer months when fresh fruit tends to go soft a lot quicker. These lollies took about 2 minutes to put together and the children have devoured them!

The pink ones are made by blitzing strawberries, natural yogurt and apple juice with a teaspoon of honey (for two "smoothie" style lollies). The green ones are kiwi, apple juice, lime and mint and they're really refreshing! I left small chunks of fruit in the bottoms of those ones, making them greener towards the base.

I reckon most fruit works well as an ice lolly - the world is your [ice] oyster on this one!
